On days when I have to go out in the evening or we have a commitment in the late afternoon, I love relying on my crock pot to make dinner for my family. One of the absolutely easiest meals you can make in your crock pot that will be a crowd pleaser are these meatball subs. Simply spray your crockpot with Pam or a similar non-stick product. Add frozen, uncooked meatballs. (We like to modify this recipe and make large batches of it at one time) Add pasta sauce on top of meatballs and cook on low for 6 to 8 hours. If you are able to stir it once or twice during the day it helps to prevent the edges of the sauce from burning.
Cut a bun and coat with a little bit of mayo. (Sub buns work well or these buns from Costco are pretty tasty too!) Add meatballs and sauce and then sprinkle with cheese and top with lettuce. Really, it’s that easy! Call the kids to the table and watch them gobble up this slightly messy but oh so good meal.
