I always love a good creamy salad dressing on my salad. If you read the ingredients on many store bought dressings though you may cringe a bit. There are often ingredients which I can’t pronounce and some other ones I would rather not eat. So, my solution has been to make my own as often as possible. I have seen many copycat Cafe Rio type dressings and while I have never been to Cafe Rio I loved the combination of flavours so I decided to make my own healthier recipe.
This cilantro lime dressing is one which my kids and I absolutely love. It has bold flavours and is perfect for a garden salad, a taco salad or one with chicken breast on it. The base of this dressing is plain greek yogurt which will not only give you some extra protein but makes the dressing thick. Using lime essential oils in the mix makes this dressing even quicker to make than cutting and juicing a lime yourself. Remember, that just one drop of essential oils can pack a big punch so make sure to taste the dressing before adding extra to it.
1 and 1/4 cup Plain greek yogurt (See note below)
1/2 cup packed Cilantro
1 Garlic clove
2 Tbsp Milk
2 and 1/2 Tbsp Dried ranch dressing mix (homemade or store bought)
4 drops Lime Essential Oil (or the juice of 1 lime)
1/2 a jalapeno, seeded
Blend all ingredients together and store in a glass jar in the fridge for up to a week.
Try to buy yogurt that has the fewest ingredients possible in it and contains active bacterial cultures. The one we use has just 2 ingredients in it.
If you like a stronger taste add another garlic clove and an extra drop or 2 of lime essential oil. You can also add in 1/2 an avocado to enhance the flavour and health benefits.
