Whenever I can make a dinner for my family that is focused on vegetables but full of taste I feel like I have accomplished something great. These open faced roasted vegetable sandwiches are one of our family’s favourite dinners. There is something about the vibrant colours of fresh produce that makes me smile.This dinner is so simple to make. Start by washing and cutting the vegetables.
Drizzle with olive oil and then lightly season.
Roast in the oven until just starting to darken.
Place vegetables on a bun lightly coated in a mayo and chili mix. Then top with cheese and place under the broiler. Beautiful perfection ready to enjoy!
