I really like fajitas but with the cost of peppers at $4.99/lb here it’s not a very affordable meal. So about a year and a half ago my husband and I came up with a solution that we called poor man’s fajitas. We added cabbage to the food as a filler and it ended up tasting great and keeps the meal affordable. This is also a very simple and quick dinner to make.
Beef- cut into thin strips
Peppers – any mix of green, red, yellow or orange
Montreal Stake Spice seasoning
Season the beef with the Montreal Stake Spice mix as it cooks. Drain any fat the add in garlic, onion, peppers, cabbage and cilantro. Cook until desired tenderness is reached.
Serve with tortilla’s, cheese, sour cream and salsa.
Alternatives: Try adding fresh tomatoes to the mix instead of using salsa for a different taste. You can also add avocado to your fajita or skip the tortilla and just eat it with rice.
