Well, what a week it has been! There are major changes occurring all around us in the near future yet today we are focusing on the past as we celebrate Remembrance Day. I hope that everyone will take a few moments to reflect on the sacrifices of those who came before us in order to allow us to have the freedoms that we have today.
Meanwhile, the gorgeous and unseasonably warm weather that we have been having is absolutely wonderful. I even have flowers blooming in my yard again! Unfortunately though, it is only expected to last a few more days. *Insert me crying here* By this time next week we will be back to a daily high of around the freezing mark. In order to try and swallow this sad news, I have tried to plan warm comfort meals for the second half of the week.
Along with those comfort foods we will be eating some super simple meals like chicken caesar salad and tacos as well as some family favourites like lasagna and pulled pork sandwiches. We are still continuing to eat what we have in our fridge, freezer and pantry while our income is reduced as my husband is on parental leave. Since we live on last month’s income we still have to make our food budget really stretch until January. It is a challenge I tell you- we shall see if we will make it!
